We played in a local summer league for several years and the kids and parents loved it. One to two games a week, mostly on weekday nights. I think the reason it was so popular was that you didn't have to give up a weekend, plus the field had lights so the games started when the temps had cooled down and the second game was under the lights. A lot depends on what the teams in your area are looking for.

Most single day tournaments are 500 or more this season, which puts our organization out based on several things. We have an organization near us that does 3 team round robins on one field for $150. Those tournaments are more fun, less serious. A four team so you could be guaranteed 3 games would be a plus. Our local youth games have always had one umpire, I have never in my life watched a game below jv level with more than one umpire, but Yes I would pay more for it. Most organizations, especially with older kids would be ok with it but we are pretty strapped for budget
