DD has a Nokona buffalo combo and the Nokona buckaroo catchers mit, I've been looking at the Vinci for her but havent been able to get my hands on one for DD to tryout or compare to what she's already using.

I guess my question is what are the selling points on me buying her a Vinci vs staying with what she has?

The Vinci is cheaper and provides better hand protection.

Cheaper isn't a selling point because she already has both of the Nokona's which will last her for years other than maybe repading and relacing which Nokona does for around 100 bucks.

So how does it protect the hand better? Is Vinci using better quality padding that holds up longer compared to Nokona are they using thicker padding?

Yes and yes. The Vinci's "pop" just as loud as the Nokona's as well.

My DD is a HS Freshman and is in need of a new catchers mitt. What do you guys recommend? Best padding? Durability? Price? Size? Thanks in advance for the info

Hard to beat a Nokona or a Vinci.
