I have found that one of the best drills for block is the wall drill. They can't see where the ball is going and they have to react. And they can also do it at home or behind the school. As far as live pitching goes, I love it and I make my catchers answer the following questions:

Hmmmm... Interesting post. I think practice is great but game time is very important as well. I cant tell you exactly what the ratio should be be but no matter how much "game like" practices you hold nothing beats the real thing.

A staggered stance is a stance that a coach would have the catcher get into and IMO is a risk that the coaches have to take. BTW, most of the time I see MLB and college catchers in a stagger stance there is a base runner on st. Was that the case in your situation?
Hmmm, I coach catchers as well and I have found that keeping the hand behind the glove you actually have more catchers that get their hands hit by the ball or the bat. As a matter of fact my 10U DD is a catcher and she had the hand behind the glove for many years and I have been working with her...
I hate to sound rude, bad or whatever BUT your the coach and coaches make decisions that can help a team win or indirectly cause a team to lose. It's part of your job, don't feel bad ... move on and keep your head up.
