So does the ball become dead when the batter doesn't hit the illegal pitch or do you let the whole play play out.

If the pitch was a strike, but the runners stole bases, could the offense take the result of the play?

Yes, on a delayed dead ball, you let play continue, just like any other pitch.

And yes, they could take the steal and strike instead of the ball/illegal pitch if they wanted. Offensive teams choice.

It is a BALL on the Batter or the offensive team can take the result of the play. As others have mentioned, if the batter reaches 1B safely and any other runner also advances at least 1B safely, the option is no longer available and the result of the play stands.

Just an aside-If, for instance, the batter is thrown out trying to stretch a double, the option would still be cancelled. Also if she is thrown out returning to 1B or even if she is called out on appeal for having missed 1B. In all of these she has 'reached 1B safely'.

In our game- Field umpire calls an illegal pitch. The pitch is wild and ball 4. The runner from third steals home. I question if the play was dead with illegal pitch. Umpire claims the ball is not dead and allows the run. Was this the correct call?

The ball is dead immediately when an illegal pitch is called. There can not be any plays once the ball is dead. Play is suspended.
You are incorrect sir. In no rule set is an illegal pitch a dead ball.

There is a very limited subset of illegal pitches where the ball is immediately dead. None of those were considered in this thread.
