I teach the fingers pointing away from the target as well. I believe the reason this helps with velocity and accuracy is because it promotes internal rotation of the forearm. Also makes it harder to push the ball (pie throwing).
In my opinion foot work should be taught first/at the same time. If younger players dont use their big muscles to power their throw they will be more susceptible to arm injuries.
