A lot of advice to have the catcher set up late, but I imagine that unless your catcher is really skilled at doing this two big problems can occur: She'll not be comfortable/in position to receive the ball well, and this could distract/block the umpire, who sets up in a certain spot over the catcher's shoulder. If your catcher is moving late, the umpire may not have time to adjust (and, I presume, he doesn't want his head to move anyway).

When I coached travel ball my signal for a fake bunt/take with a girl on 2nd was to tap my left fingers with my right hand.
I can't remember how many times F5 would look over her shoulder, see my signal and shout, "Bunt!!" Which would cause the infield to crash in.
Of course this was my intention because many times there was nobody on third to interfere with with my girl's steal.
Stealing signs is highly overrated unless done discreetly.

Good point. I have pulled catchers because they insisted on setting up late. Seems they were more concerned with following their Dad's instructions and NECC training than doing what was necessary to make the pitcher effective. Eventually they figure out it is not all about them.

It's like counting cards in Vegas - there's no rule against it, but everyone seems to think there is.

Perfectly legal for her to do. Not to say it won't get people all bent out of shape over it, but it's perfectly legal.
