Showing the ump the ball

Play at 3B, runner slides in but throw is there first, tag is applied but when 3B extends arm up to show blue, the ball flies out of her glove and runner is ruled safe.

She was in control of the ball until she extended her arm to show she had it.

What determines whether or not the runner is safe? (Blue called her safe, said it was "unintended release" or something like that)

I know it probably is a judgement call, but in such a case, it seems that the fielded should never show the ball unless asked.

While she may have had control prior to the tag, the fielder must demonstrate control through the completion of the play.

But, once she began the act of showing the ump the ball, doesn't that put an end to the act of completing the tag?

If the umpire asked to see the ball, the player lifts her glove and the ball falls out was she in control of the ball at the conclusion of the play? Apparently the umpire saw something he felt could have meant the ball was jarred loose and asked to see it to confirm.

If she lost the ball, I guess there was no evidence of control. A voluntary release is one method of providing evidence of control

I agree. Let the umpire make the call. If the umpire asks to see the ball, there are no extra points for speed, so don't be hasty, just slowly withdraw the glove with the ball in it and let the umpire see it.
