runner on first, batter hits ball past first baseman and hits runner, second baseman did not have a chance at it. runner is out. does batter get hit hit recorded? it would have been a hit had not the runner been hit... ?

Yes, it would be scored as a hit. Anytime a batted ball hits a runner, its a hit. Doesn't matter if fielder could have or not gotten the ball. But of course the runner is out.

Per NFCA Scoring Rules:

Credit a hit ... if a runner interferes with a batted ball, but the batter would have been safe without the interference.

Runner is out for being hit by a fairly batted ball. Putout is credited to nearest fielder.

My understanding was that once the batted ball gets past the first infielder, the runner wouldn't be out. maybe i remembered it wrong and its not that simple.
what age level was this?

Doesn't matter if past infielder or in front of infielder. As a long as a fielder doesn't touch the ball and the ball hits the runner, runner is out and batter is credited with a single and gets 1B as long as less than 2 outs.

Not here.
Rule 7.09 is also relevant. The runner is not out if 1) the ball was first deflected by a fielder or 2) if the umpire is convinced that the ball went through or past the fielder untouched, and in the umpire's judgment no other infielder had the chance to make a play on the ball
1.The runner is not out, however, if he is touched by a batted ball after it passes through or by an infielder (except the pitcher). We're talking about when a base runner is passing behind the infielder while fielder is making a play on the ball, but the infielder then misplays the ball. The misplayed ball passes through the infielder's legs, or by him on either side, and then touches the runner. This is not interference. The ball is live. Play on. However (this is important), when you see this, be sure to give the safe sign to signal that you saw what happened and you're calling it nothing. This will save you arguments.

I believe the runner is not out.

The runner would not be out IF in the "umpires judgement" no other defensive player had an opportunity to make a play.
