We played similar rules and had the best P pitch 1st inning then pulled her. 1st inning seemed to be the hardest inning to get out of without getting into a lot of trouble. Then let the game play out usually she ended back there but not always.

If we pitched by ourselves for a while I always sat on a bucket, any pitch that went sideways I did not even try to catch. If there was a batter I would not use a bucket, still would not catch balls the went sideways though.
DD got warned a few time for quick pitching the umpire. Like you we needed her slow her down a take a breath. I do not recall her quick pitching a batter.

What I like about this drill is you can put a plunger in the batting tee so you can put a huge ball on to it. Hit it a few times in a row decrease ball size, If they miss that ball back to the bigger ball. It becomes a completion.
