It may not be the coach doesn't know how to teach bunting, many kids don't want to learn how to bunt... they think it's below them. Everyone should be able to bunt even if it's for that one time when the TEAM needs it.

You might want to change your signs. Use fingers just like u give a sign, i.e. first sign is pitch, the second sign is location and third is a dummy sign. You can change this up by inning or game.
Sign stealing is part of the game. Make it so they can't steal your signs.
If you ask college coaches they will tell you they want multi-sport players. It gets them away from the game for a bit and cuts down on overuse injuries and burnout. Softball, or any sport, should not become a job. They should enjoy playing it and working to improve.
