I'm trying to understand dp/flex more. If I am fielding 10 players at 8U can't I use a flex/dp, correct? If I bat all 11 girls on team then there is no need for a flex/dp, correct?

Well in USSSA you can hit all the players on your roster, and I believe its the same in USA. You only have 9 in the field.

One of my best one-liners to a coach ...

Coach hands me his line-up card and says "I have a couple of girls hurt, but I'm hitting them all."

Me: "Coach, if you quit hitting them they probably wouldn't be hurt."

So in this instance is the over heated 3rd base no labeled as DP and and the initial DP now 3rd?

The players designation doesnt change. The DP in the lineup is always the DP, if 3rd base gets overheated and the coach puts the DP into that defensive position she is still the DP but she is playing defense for whoever the player was at 3rd. 3rd simply goes to the bench to cool off but remains in the batting lineup.
