Tournament Food Question

I have not worked with food trucks myself, but if these are one-off tournaments I would definitely look into that. The headaches saved from not having to deal with staffing, food handling, shelling money out up front, hauling product, etc. may make it worth it. If you get rained out, you aren’t out anything and/or stuck with all the product.

If it is something more regular and you have a concession stand, we used to make a killing off of French fries and cheese fries at our community ballpark. We’d burn up a few little home fryers each year ($20-$30 each), buy 20 lb. boxes of fries at the local “warehouse“ retailer for $18 or so, and sell an order of fries for $2.00 ($2.50 for cheese fries; it was a little pricier, but we just used Gehl’s for the sake of ease of use). We’d get about 60 orders of fries per box so we were making around $100 per box and going through 2 boxes a week.

The last tournament i went to had burgers, dogs, walking tacos, and fresh fruit cups that one of the moms made up the day before. We sold out of walking tacos and fresh fruit cups both days.
We also had muffins and granola bars available for the morning games

I second the fresh fruit cups. Many families want to have their athlete eat healthy but fail to pack fresh fruit as a snack. The BGE is also an excellent option. I have an XL myself and usually do 6-8 10 to 12 pound butts at a time on a stacker deck. They sell out before noon each day. Sweet Baby Ray's Maple BBQ sauce sells well. Another great one is to take a large bottle of SBR sweet and spicy BBQ sauce and mix it with both a large and small jar of Raspberry jelly for a sweet'n'spicy Raspberry BBQ sauce that is unrivaled until you start finding your own BBQ sauce recipes for you to play with.

We have been toying around with the idea of food trucks and working out some sort of profit share deal with them. If anyone has experience with this, any suggestions as far as what sort of deal you've done in the past would be very welcome.

I haven't been involved specifically, but know it has been very easy. Call them up. They usually have a set percentage they will donate to your cause. Beg for more for the girls. Then tell them what time they can show up, where to park, and maybe they need a power outlet. After that, they drive away and give you a check for your share. Lot's of happy people.

If you're a not for profit, or it's a fundraiser, go to your local food/grocery stores to see if they will donate food. Many will, especially if you market them, and profits take a nice bump
Yes, we will be doing that too. Last year we didnt start soon enough but still it worked out well

I will practice and see how many sandwiches i can expect to get out of 1 butt and figure Out the cooking from there. its a small tournanent so i dont expect to need more than 4 butts-worth.
a couple questions:
1- should i pull the pork with carolina sauce and then have a couple different bbq sauces (like SBR) on the condiment table, or should i go ahead and mix it all together?
2- how much should i be looking to charge for PP- im assuming $3 or $4 but i have no clue.

I just rub mine then smoke. When done, I wrap them and let them sit for 1-2 hours to re-distribute the juices. It will be easy to pull and super moist so no sauce is needed while pulling. Add a little vegetable stock and throw in the crock-pot on warm. Have your Carolina sauce and a couple others on the condiment table. That way they have their choice of which one they want as well as how much they want on it. I charge $5 a sandwich because let's be real...how many tourneys in your area have outstanding BBQ Pulled Pork sandwiches for sale? and It's all about making the money to help support the organization or team.
