Taking my DD to her first college softball camp in a couple weeks and as I'm making plane and hotel arrangements, I was just thinking about what parents do during the two-day camp. Are parents normally allowed to stay and watch? I'd love to watch, but I don't want to be "that parent" either!

Also, is it a good idea for her to email the college coach and let her know she is coming? She's already sent her a couple of emails, including some with her PGF schedule this week. We thought it would be a good idea to do this, especially since she's already in town for PGF.

Yes email the coach and let them know you will be at the camp. Something my DD does is email the coach and ask if it's ok to tour the campus the day before or after the camp. That has earned her an unofficial visit and in a month a football game. My DD is going into 9th grade so the coaches won't contact back (D1) which this school is, but they did call the Manager who's contact info is always listed in every email she sends to ensure an open line of communication can be used.

Yes, they're allowed to stay and watch. Sometimes coaches will have a chat with parents at a long camp like that and give advice on recruiting, etc.

Also, you most definitely want to email the coach ahead of time if this is a school that DD is interested in.
