In your face
First of all, I hate timed games. But it is what it is.

I ask the field umpire (with the official time) for her time. She says, "7:47pm coach." I say, "Then that's game - started at 6:02 plus 1:45 makes 7:47", then had my girls line up.

I'm going to mimic CB. This is the only thing I see, that should have been handled differently. Yes we all get caught up in the excitement of the game, so let's not focus on a minor mistake. But, it's not your call to declare "ball game". As coaches we "ask" for the time, we ask "is that game blue"? But the official call should always come from the umpire, before any action of a coach or team. ( line up )

For the record, a $4 electronic clock with a ringer, should be mandatory at EVERY timed game. That way there is never any question of when time is up.

I think that's absolutely fair enough to state/recognize. Being happy for my girls pulling out a win is something I won't apologize about to any coach. This is a 3rd year team that is (currently) 4-4, and considering the fact we've been 1-19-1 in the past 2 seasons combined, I'm excited anytime these young ladies play to their advantages - especially how YOUNG they are (this is a 16U team where 7 of my 10 girls are 12-14). Does it seem shallow or "childish" to "win a kids game" as this coach said? Absolutely not, because a.) This isn't a "kids game" - that's justifying the fact one lost, and b.) Any coach would feel how I feel in my place, and they'd be lying if they said the opposite. :)

Don't lose a single second on sleep of this. I do just like you described and make it a point to record the game time on the score book and make sure that the umpire and other team all agree on the time, then when someone has a question about time everyone gets out their cell phone since they are all synced to exactly the same time and that is the time, simply math ensues and no more debate.

But your most unsportsmanlike thing you did was beat his team....sore losers are never going to be happy

I had this same exact situation: We were winning, umpire did not call the game but time was up (it was exactly 1:45 after start). My assistant coach said "That's it, time's up." I looked at the umpire who said "Your call." I said to the other coach "Want to get in one more inning?" Other coach said "Yes!"

We lost.

Next time just ask the umpire how much time is left (if you think time is expired). If you disagree then start throwing out numbers.

Same scenario if you think you have run ruled a team during the game. Ask the umpire (privately) what the run rule is; they will get the hint and get it sorted. I have seen coaches line their girls up to shake hands and the umpire tell them the game isn't over yet.

Best to let the umpire make those calls.

So if I understand correctly in the last half of the inning you "eventually" pulled ahead by 1 run and went through all 3 outs in the span of only 5 minutes?

This is what I imagine:
1st pitch - HBP
2nd pitch - strike 1, PB, advance to 2B
3rd pitch - strike 2, PB, advance to 3B
4th pitch - DTS, runner out at 1st, runner from 3B scores
5th pitch - pop up, 2 outs
6th pitch - pop up, 3 outs

I can actually tell you what happened - bottom of 6th starts at 7:42pm
Batter #2 - 1-1 count, grounds out 6-3
Batter #3 - 3B on first pitch
Batter #4 (cleanup) - 2B on first pitch, RBI
Batter #5 - 1-1 count, grounds out 6-3
Batter #6 - 1-0 count, grounds out 6-3.

This team has a nasty habit of swinging at the first pitch. I can't figure what to do to cure it, but sometimes we're the fly, sometimes the windshield.

Sounds to me like an absence of situational awareness on the part of the players and the third base coach.
